Buddha Bowl
A colorful, nutritious meal that's perfect for meal prep. Part of my Health Dashboard nutrition strategy.
Base Components
A good Buddha bowl has:
- Grains - Quinoa, brown rice, or farro
- Protein - Chickpeas, tofu, or tempeh
- Roasted veggies - Whatever's in season
- Raw veggies - For crunch and freshness
- Dressing - Ties it all together
- Toppings - Seeds, herbs, extras
My Go-To Recipe
Ingredients (serves 4)
Base:
- 1 cup quinoa, cooked
- 1 can chickpeas, drained and roasted
- 1 sweet potato, cubed and roasted
- 1 cup broccoli, roasted
- 1 cup shredded red cabbage
- 1 avocado, sliced
- 2 cups baby spinach
Tahini Dressing:
- 3 tbsp tahini
- 2 tbsp lemon juice
- 1 tbsp maple syrup
- 1 clove garlic, minced
- Water to thin
Instructions
- Cook quinoa according to package
- Roast chickpeas (400°F, 25 min with olive oil and spices)
- Roast sweet potato and broccoli (400°F, 20 min)
- Whisk dressing ingredients, add water until pourable
- Assemble bowls: base of greens, quinoa, then toppings
- Drizzle with dressing, add seeds
Meal Prep Version
- Cook grains and roast veggies on Sunday
- Store components separately
- Assemble fresh each day
- Keeps 4-5 days in fridge (dressing separate)
Variations
- Mediterranean: Falafel, cucumber, tomato, tzatziki
- Asian: Edamame, pickled ginger, sesame dressing
- Mexican: Black beans, corn, salsa, lime crema
